Valravn, Sonoma County Cabernet Sauvignon
VINEYARDS & WINEMAKING: The Valravn Cabernet Sauvignon is Cabernet Sauvignon blend with small portions of Merlot, Cabernet Franc, Malbec, and Petit Verdot. The grapes hail from Sonoma County vineyards, including the sub-appellations of Dry Creek Valley, Moon Mountain, Sonoma Valley, and the cooler Knights Valley. Combining elevations, aspects, climates, and soil types allows us to blend the components for a seamless composition. In the cellar, hand-sorted grapes undergo an extended cold soak followed by primary fermentation in stainless steel. Following primary fermentation, the wine is racked to French oak barrels (new, second use, and neutral) for 18 months aging – Sylvain, Gamba, Darnajou, and Seguin Moreau cooperages.
TASTING NOTES: Decidedly ripe-vintage Bordeaux inspired with a balance of savory and sweet immediately apparent in the clove/baking spice meets cassis/dark berry aromatics. It has a smooth tannin structure with high tones, opulent fruit, and notes of espresso and dark chocolate.
