Paix Sur Terre Ugni Blanc

It’s wild to think that our Ugni Blanc has become one of the most iconic white wines in Paso, especially considering there was no buyer for this fruit when I first purchased it in 2013. This is not a wine defined by fruit—though you may catch faint notes of pear and red apple skin—but by its grounding presence. Think oysters on the Pacific: briny and salty, with cremini mushroom, striking minerality, and a palpable sense of tension.
