Eisele Vineyard ARAUJO ESTATE ‘Altagracia’ Cabernet Sauvignon

In 2011, Eisele Vineyard’s character shone. Spring was near-complete flowering, late rains affected regional fruit-set. Cool summer allowed even ripening for an average crop. Rain arrived as ripeness neared, testing patience for tannin and phenolic maturity. Harvest began late September, parcels matured sequentially. Vigorous pre-sorting in the vineyard eased winery sorting. Regular crew grew to 50, meticulously removing affected berries. Cabernet picked on October 23rd. Fermentation in small tanks promptly followed. Aged in new French oak for 19 months, bottled August 2013.
