Nicolas Rossignol, Volnay 1er Cru "Santenots" Mise en Tardive 7 Ans
This wine originates from Santenots du Bas, positioned on the same hillside level as Ronceret. The vineyard begins on a gentle slope that flattens out midway. The soil is deep and rich, with a dark red hue due to its high iron content and features large round rocks known as “ship heads.” The vineyard blends 20-year-old vines from Volnay, where the soil contains larger rocks, with 70-year-old vines from Meursault, rooted in clay soil. The wine is dense and intense from the start, with unique animal notes and a subtle palate, showcasing length and strength. It leans more towards Côte de Nuits characteristics than Côte de Beaune. The “Cuvée 7 ans” is distinct for its seven-year aging in 600-liter barrels, allowing for slow maturation and resulting in a wine that’s ready to drink upon bottling.
