The cuvee “Les Herses” comes from a southeast exposed 1.6 hectare parcel with 45-year-old Sauvignon vines with flinty clay soils. The cuvee is fermented and aged in wooden vats and tonneaus for ten months and then another six months into vats. The wine is full-bodied, pure, mineral and fresh, very well and firmly structured but still very young, developing an enormous citric and salty length of great purity and tension.
